Queso Fresco!
I was chatting with Schuyler and I was reminded of his fantastic Stranger Eats, the site is predicated on him asking total strangers online for recipes. The results are sometimes delicious and often hilarious.
Most recently, he made queso fresco so I gave it a try. Let me just say that 10 minutes ago I had milk, salt and vinegar and right now I am eating my very own home made queso fresco! And it’s good!
Oh and in case you’re wondering how to make queso fresco…
pour 1 quart of milk in a pan. Add 1/2 tablespoon kosher salt. heat to boiling. Add 1 1/2 tablespoons vinegar. Almost immediately, the milk will separate into curds and whey. Stir til it’s all clumpy. Pour into cheese cloth in a colander. When it cools a bit, squeeze it tight. Cheese!
