Out of Joy of Cooking. Easier than pancakes, faster and better!

Set the oven to 425

whisk in a bowl:

  • 1/2 cup milk
  • 1/2 cup flour
  • 1/4 cup sugar
  • 2 eggs

Turn a cast iron pan on medium. Put

  • 2-4 tablespoons butter

in the pan. Once it has melted, pour the ingredients from the bowl into the cast iron pan in one motion. Turn the pan on high and leave for 60-90 seconds.

Put the pan in the oven and leave for 13 minutes. You'll know it's done when the middle has puffed dramatically. Take it out and let sit for 5 minutes. Eat with

  • a touch of strawberry jam or
  • powdered sugar or
  • whatever!

If you double the recipe, it'll come out different but good nonetheless. You'll need to leave it in the oven for 14-15 minutes.
