Union Oyster House Cornbread

Ingredients

  • 6 oz butter (1 1/2 sticks) softened
  • 2 cups sugar
  • 2 tbsp baking powder
  • 2 tsp salt
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup corn meal
  • 2 cups milk
  • 3 1/4 cups flour
  • 1 drop yellow food coloring (optional)

Directions

  1. Cream butter, sugar, salt, baking powder.
  2. Add eggs, cream until light and fluffy.

  6. Mix until smooth, about 1 minute.
