"Mom" is Ida
- Oil and butter
- 1 crushed garlic clove
- 1 chopped onion
- 3 tablespoons tomato paste
- 1 lb thinly sliced mushrooms
- 2 oz dry Vermouth or white wine
- 3 cups chicken broth
- salt and pepper
Cook all together
In a bowl:
- 3 egg yolks beaten well
- 3 oz grated parmesan cheese
- 2 tablespoons chopped parsley
Beat together and put into mushroom mixture. Simmer for a while.
